Merry Christmas GoSeers with Dream-Pot's special recipe for Festive Cake. Our 6 litre Dream-Pot thermal cooker goes everywhere with GoSee. It does the job with great meals on the move, but the best thing about Dream-Pot is the steady flow of fresh, easy, clever recipes which Merran and Barry Green, post to their website.

We include pictures of the many diverse recipes available from Dream-Pot at the end of this recipe.

Here is something special for Christmas. It is the Dream-Pot Festive cake recipe.

Boiling time on stove: 40 minutes

Cooking time in the DreamPot: 2 hours minimum

Ingredients (cake)

150g mixed glace fruit (e.g. pineapple, ginger, apricots), coarsely chopped into chunks

100g pkt red/green glace cherries, halved

1/3 cup blanched almonds

¾ cup Brazil nuts, halved

¾ cup macadamia halves

1 cup raisins

1 1/3 cup dates, halved

½ cup plain flour

¼ cup SR flour

1 teaspoon cinnamon

2 eggs

2 tablespoon brandy

1/3 cup dark brown sugar, firmly packed

Ingredients (topping)

150g mixed glace fruit, coarsely chopped

100g pkt red/green glace cherries, whole

¾ cup Brazil nuts, whole

1/3 cup blanched almonds, whole

¾ cup macadamia halves

Ingredients (glaze)

2 tablespoon brandy

½ cup apricot conserve

1 dsp grated orange rind

Method:

1.Spray small inner pot well with cooking spray.

2.Mix together in a bowl the fruit and nuts for the cake, i.e., glace fruit, cherries, nuts, raisins and dates.

3.Mix together the flours and cinnamon.

4.Add ¼ cup to the dry fruit and nut mixture and mix well.

5.Beat or whisk the eggs, brandy and sugar together until creamy, approx. 3 minutes.

6.Stir in the remaining flour mix.

7.Pour over the fruit mixture in the bowl and fold through to combine.

8.Spoon into the greased small inner pot.

9.Press down well with the spoon turned over.

Method (topping):

1.Place the fruit and nuts for the topping onto the top of the cake mixture randomly to cover completely and press into the cake mixture gently.

Method (to cook):

1.Put 2 litres boiling water into the large inner pot and return to the boil.

2.Place the small inner pot containing the cake mixture over the boiling water.

3.Cover with the stainless steel lid and boil on the stove as a double saucepan for 40 minutes. (Make sure it is boiling and ensure the steam is constantly visible between the two pots.)

4.Transfer double pots into the Dream-Pot® for the required minimum cooking time.

5.When suitable, remove from the Dream-Pot and cool in the inner pot. Prior to tipping out, run a sharp thin knife blade around the outer edge of the cake to loosen, and then glaze the cake.

Method (glaze):

1.Put brandy, apricot conserve and orange rind into a small saucepan.

2.Boil and then simmer for 3 minutes, stirring.

3.Brush over the cake, using a pastry brush.

Note: A 6 inch (15cm) ring tin may be used (instead of the 2 litre inner pot) standing on a trivet, as per the boiled fruit cake recipe. There may be some fruit and nut topping left over. Boiling time is reduced to 30 minutes.
